Philly Coffee Crawl With Brian's Coffee Spot Part Two

Sunday...my coffee crawl with Brian ambitiously continued as we planed on hitting at least five coffeehouses.  Daily News food photographer Drew Lazor arranged to join us at two of them Bohdi and Ox Coffee.

Hanging out with Brian put me in a British frame of mind and decided to try a Cortado at our first stop, Bodhi Coffee.  What a marvellous drink it was!  In Spanish, cortado means cut. Quite simply, the drink is espresso served in a shot glass cut with an equal amounts coffee to milk, packing a lot of taste in a four oz drink.  This one was made with local micro-roaster elixr's beans.

Drew joined us as we settled into our chairs.  I learned that Brian's interest in coffee houses is finding those who not only makes great coffee but more importantly is a comfortable and welcoming destination.  We discussed the growth of specialty coffee in Philadelphia and beyond, how coffee houses try to break down the "coffee snob" barrier and where the industry might be headed in the future.

After an hour relaxing at Bohdi we took a walk over to Ox Coffee where co-owner Max Cudworth was slinging shots of Stumptown.  I had a cup of Hollar Mountain blend and our conversation continued.  You can read Drew Lazor's article here: "Tea for two, coffee for the rest".  If you read it, please be kind when commenting on the photograph of Brian and me :)  After about 2 1/2 hours Drew left us to continue our Philly crawl

Our next stop was One Shot Cafe in Philly's Northern Liberties neighborhood.  I love photographing this coffeehouse with its interesting layout and architectural features.  One Shot also serves food and by the time we arrived we were famished.  In honor of my special guest, I ordered a Stumptown Flat White.  Brian and I parked ourselves by the front door, discussed the merits of British vs. American coffeehouses and admired the attractive crowd streaming into this popular establishment.

By the time we got to ReAnimator, it was four o'clock and we were buzzing from the caffeine.  I already had six cups and was beginning to feel like the day was becoming a sort of out-of-body experience.  No, I don't do coffee crawls that often and I was considering crying "uncle".  It was quite the dilemma as ReAnimator is my favorite Philly roaster.  I started with a cup of Chiapas which was well crafted and I would never have guessed that it was  decaf.  We also ordered two cupcakes in an attempt to neutralize the effects of the caffeine.  Co-owners Mark Corpus & Mark Capriotti soon arrived sporting a new Mahlkoning grinder they purchased that day at Coffee Fest in New York City.  Corpus is also ReAnimator's roaster and we stood around talking shop.

Around 5:30 we left ReAnimator and drove back to Brian's hotel.  On the way I asked what he thought of Philadelphia's coffee culture.  Brian declared it is on par with any city in Europe or the United States and he was especially struck by the welcome feeling he got at every stop.  So with my job done I bid Brian farewell and wouldn't be surprised to hear that's he's going to visit us again the next time he is in the States.

360 Degree Coffeehouses

Recently I downloaded an iPhone app called "Sphere".  After taking a maximum of 40 photographs from within the application, Sphere stitches them together for a fully immersive web view.  While I like the app on its own, it has its limitations.  I find that 40 images are not enough for a full 360 view and unless you use a tripod with a panoramic head, Sphere sometimes has a hard time lining up some of the frames.  This is especially evident when shooting a space with people.

After much trial and error, I find that working with a number of applications, both iPhone and Mac and shooting individual images before stitching enhances the end result.  I start by taking between 60-80 photographs with my iPhone camera.  Next I use AutoStitch to combine the images.  Then I enhance the image and make corrections in Snapseed, Lightroom and Photoshop.  Finally I finish the image in Sphere.

A few weeks ago I was in Castries, St Lucia (yeah I know it's a rough life) and discovered the most amazing Catholic church, the Cathedral Basilica of the Immaculate Conception.  It's the largest church in the Caribbean, built in 1899.  The wood interior is a sight to behold, with a spectacular mural painted by Dustan St. Omer.

ReAnimator: The Coffee Danse Macabre

Not far from the Frankford El there's a coffee roaster doing magic things with beans, creating a coffee "Danse Macabre". Experiencing their craft in a cup is akin to reanimating the senses no matter how dull they were.

Three years ago, Mark Corpus and Mark Capriotti both neophytes to the coffee business, decided to take the plunge. At the time, La Colombe dominated the market. The two Marks felt that what was missing from the city was a local expression of a less dark roast focusing on single origin beans and not blends. Testing and retesting, Corpus started with a home roaster, honing his craft. Finally, in 2011 he left his finance job behind focusing full time on ReAnimator.

To say the two Marks are fast learners is an understatement. Corpus, now the company's Roaster is producing a tiny 500 - 700 lbs per week. Slow and steady is their pace and business model. ReAnimator (and another local Rival Brothers) are the first to introduce Philadelphia to a home town interpretation of what is sometimes know as "Third Wave" coffee. The single origin beans are roasted just so... not too dark to allow the natural flavors express themselves.

It's a tiny operation focusing on quality and artistry over size and quantity. They work with well respected importers such as Coffee Shrub who pay coffee farmers sustainable prices for the best quality beans. The two Marks have also recently visited a farm in Nicaragua establishing a "relationship" partnership (also known as Direct Trade).

So how is the coffee? Well now you can check it out for yourself in ReAnimator's own cafe which opened August 10th. After checking out their Ethiopian Yirgacheffe, I knew they are going to be a major force in the coffee world. The lemony fruit flavors sang as I sipped a cup. It tasted hand crafted, it was perfectly roasted and prepared.

I'm told that another cafe is in the works. This one will also contain their roasting operations, an exciting development that is sure to enhance Philly's reputation as a major player in the coffee industry.
